Business Technologies, Hotel/Restaurant/Hospitality – General Students interested in Hotel/Restaurant/Hospitality and related studies, but are not certain in which specific area they wish to specialize, should enroll in this program.

This program consists of foundation classes for culinary students or professionals who are in related studies, and who are interested in Hotel/Restaurant/Hospitality but are not certain in which specific area they wish to specialize.  Depending upon which track the student chooses, subjects emphasizing managerial proficiency, issues in the hospitality industry, business procedures, purchasing, computer operation, and accounting.  Students choosing the culinary track are offered professional baking techniques, professional food preparation methods, sanitation and safety regulations, and aspects of menu planning. Upon successful completion, graduates can obtain employment in food service and management in the various settings such as hotel, restaurants, health care facilities and private enterprises.

Program Learning Outcomes

  • Practice the principles of management.
  • Evaluate the need for unions and government regulations.
  • Use plants, supplies and design skills in flower arrangement.
  • Evaluate methods to maintain quality and cost effective measures.
  • Use proprietary software applications and the internet to produce required reports.
  • Analyze specifications for purchased products.
  • Address the basic problems in all food services: Purchasing, receiving, storage, preparation and service effectively.
  • Produce menus that are nutritionally adequate and maintain variety, balance and appeal to the target group.
